The History of Minestrone and a Classic Recipe

Minestrone is one of Italy’s most traditional home-style dishes. It is a hearty soup made by simmering a variety of vegetables, beans, and sometimes grains or pasta. The name “minestrone” comes from the Italian word “minestra,” meaning soup, and generally refers to a substantial soup filled with a variety of ingredients.

The origins of minestrone can be traced back to ancient Rome, when people commonly prepared simple soups using locally available ingredients such as beans, onions, cabbage, carrots, and grains. Although today minestrone is often associated with its distinctive red tomato-based broth, tomatoes were not part of the original recipe. Tomatoes were introduced to Europe from the Americas after the 16th century and gradually became an important ingredient in Italian cuisine.

One of the most distinctive characteristics of minestrone is that there is no single, strictly defined recipe. The ingredients vary depending on the region, season, and household. Beans, potatoes, cabbage, zucchini, celery, pasta, and rice are all commonly used. In this sense, minestrone is similar to Japanese miso soup: every family can have its own version and flavor.

For a basic four-serving recipe, prepare one onion, one carrot, one potato, half a stalk of celery, two or three cabbage leaves, half a zucchini, 80 g of bacon, one clove of garlic, one 400 g can of chopped tomatoes, 100 g of cooked white beans, 500–600 ml of water, one bouillon cube, two tablespoons of olive oil, and salt and pepper to taste.

First, cut the vegetables and bacon into pieces of approximately 1 cm. Heat the olive oil and finely chopped garlic in a pot over low heat. Once the garlic becomes fragrant, add the bacon, onion, carrot, and celery. Sauté them gently for about 5–10 minutes until the onion becomes translucent and develops a natural sweetness. Taking time with this step helps create a richer and more flavorful soup.

Next, add the potato, cabbage, and zucchini and sauté briefly. Add the chopped tomatoes, water, bouillon cube, and white beans. Bring the soup to a boil, then reduce the heat and simmer gently for approximately 20–30 minutes, or until the vegetables are tender. Finally, season with salt and pepper to taste.

For a more substantial meal, small pasta can also be added. Finishing the soup with freshly grated Parmigiano Reggiano and a drizzle of extra virgin olive oil gives it an even more authentic Italian flavor.

Minestrone is a wonderfully flexible dish that makes excellent use of everyday vegetables and can easily be adapted to whatever ingredients are in season. Having evolved alongside Italian households over many centuries, it remains a simple yet deeply comforting dish that perfectly represents the spirit of traditional Italian home cooking.
